Further, menus are often updated based upon seasonal ingredients found in local markets. According to AmaWaterways’ Executive Chef Daniel Tanase, “One night, we had planned to serve chicken confit, but found local venison that was beautiful. So, we switched, and I sent our Hotel Manager to get fresh, local organic chestnuts, a wonderful accompaniment for the venison.”
